I tweaked the recipe a little bit, but the original recipe came from Oxygen Magazine..
Ingredients:
Nonstick cooking spray
4oz skinless chicken breast
1 light laughing cow Swiss cheese wedge (I used the chipotle cheese wedge)
1/4 cup low fat, low sodium cottage cheese (I used fat free)
1/3 cup diced tomatoes
2 tbsp fresh rosemary (I used 1.5 tbsp and thought it was still too much)
2 tbsp oat bran (I used 1 tbsp)
1 cup chopped broccoli
1 cup chopped cauliflower
1 tbsp olive oil
2 cloves garlic, fresh, chopped
1 4-oz sweet potato
Directions:
1. Preheat oven to 350. Spray a large baking dish with nonstick cooking spray.
2. Cut chicken breast in half and set on baking dish.
3. In a small bowl, mash together the cheese wedge with cottage cheese. Add tomatoes and rosemary. Mix well.
4. Stuff the cheese mixture into one side of the chicken and use the other half breast to top it. Dust the top with oat bran.
5. In another bowl, toss together broccoli and cauliflower with oil and garlic. Place on the baking dish beside the chicken.
6. Bake chicken and vegetables for about 25-30 minutes, or until chicken is cooked through
7. Meanwhile, wash and poke a few holes in the potato with a fork. Microwave for about 8 minutes (turning after 4 minutes).
8. Plate the chicken breast, vegetables and sweet potato. Serve.

Pesto Pizza
Pesto Pizza
Source: What Would Jesus Eat Cookbook
Ingredients:
Pesto
1 large thin whole wheat pizza shell
Slices of grilled free-range chicken
Onions, sliced (I omitted)
Tomatoes, sliced
Green bell peppers, chopped
Fresh mushrooms (I omitted)
Part-skim mozzarella cheese, shredded
Directions:
Spread a layer of pesto over the pizza crust. Top with slices of grilled chicken, onions, tomatoes, bell peppers, mushrooms, and mozzarella cheese. Bake at 350 degrees until crust is brown at edges and cheese is melted.
I sprinkled the mozzarella cheese on mine and didn't overload it. That plus omitting the few ingredients mentioned above, my pizza was about 268 calories per slice.
If you try it, be sure to stop back by and let me know your thoughts!

These turned out really good. I wish I had my camera when I made them. I put too much of the blueberries in the initial marinade and so my chickens came out this nice purplish-blue color. Still tasty none the less!

Protein Pancakes
I am not able to have many protein powders due to the ingredients. Some of the stuff they put in those things just does not agree with my stomach. When I found this recipe, I was really excited. Protein pancakes sans protein powder! Batch #1 was NO good, batch #2 was wonderful! I did not take pictures of this wonderful meal, because my camera was MIA during the production!
Protein Pancakes (recipe taken from Fitness magazine)
Ingredients:
1/2 cup rolled oats
1/2 cup fat free cottage cheese
1/2 cup egg whites
1 teaspoon vanilla extract
1 pinch of cinnamon
Directions:
Combine all ingredients in a bowl and mix/blend into a batter consistency. Heat cooking spray in a nonstick skillet and pour 1/4 cup of the batter in at a time to make 1 pancake. Cook 2 minutes per side or until lightly browned.
Recipe makes 6 pancakes.

I top mine with spray butter and fresh blueberries (calories for these are not added in above). The magazine says to top with agave nectar and fresh berries. It also says the nutrition score per pancake is 260 calories and 25g of protein. Not sure where the discrepancy in the protein is coming from.
If you try the recipe, be sure to come back and let me know what you think!

It's about to get crazy!
First, it's official, I'm famous - click here.
Second, my blog is about to get crazy for the next few minutes. A few people have asked for recipes I've made the past few weeks so I thought it would be a good idea to put them on here. I try to make a new recipe at least once a week. I will try them out and then post them on here with my review of how they turned out! Today I will post three recipes. Tomorrow I'm trying out a new recipe 'protein packed cheese stuffed chicken'. Since it will be dinner, I may not post that recipe until Wednesday.
Happy running (and eating)!

Three Things Thursday and a Recipe
Three Things Thursday
1. Food Day – Today at work, we had a food day for all of the September birthdays. With my new direction on eating better, guess where they decided to put all of the food? The desk right next to me. There is a veggie tray, so it’s not all bad. I’ve snacked on that mostly. I also brought my lunch/snacks to work as normal. I should have made something healthy and delicious. Instead, I skipped the healthy, and just made the delicious. My hubby asked me last week to make a certain dessert again, so I decided to make that and keep a batch at home. Check out the goodness here.
2. Do One Thing – A while back, my work launched a ‘Do One Thing’ idea. Basically it encouraged all associates to do one healthy thing each day. For some reason, I’ve been thinking about it a lot lately. Even on my rest days, I need to at least do one thing that is better for me than what I would normally do. One of the things I’ve done is to take the stairs instead of the elevator. I only work on the second floor, so if I don’t have too much baggage with me, I will take the steps instead of the elevator.
3. I am SO ready for this weekend! Life has been busy, busy, busy and I am ready for some down time. I think the hubby and I are going to try and go relax at the pool on Saturday and possibly even Monday. Praise God for 3+ day holiday weekends!
Recipe
I have been making this breakfast treat for a few weeks now (not every day) and I really like it! If you think of any ways to improve it, be sure to let me know!
Banana Nut Bread Oatmeal

1/3 cup water
1/3 cup 100% pineapple juice (or 100% apple juice)
1 medium banana, sliced and divided
2 tbs chopped walnuts or pecans

Sweet Treat
Lately this sweet treat has really hit the spot for me… No added sugar or preservatives or anything, just pure goodness
½ cup frozen honeydew
½ cup frozen cantaloupe
1 cup frozen watermelon
12oz 100% orange juice
Blend and enjoy immediately! You can alter the amount of orange juice depending on how smooth you like it. Also, I LOVE the watermelon in it, so I put more of that. You can adjust to your taste buds!
