I have a confession

I know you are expecting my recipe and review today. I have a confession though, I did not make the protein packed cheesy stuffed chicken last night. My husband and I were getting home from work between 5:30-6:00 and needed to run to the mall to exchange a few things. The mall is about a half hour away and we wanted to be sure to catch The Biggest Loser and The Voice. We decided to grab something on the go. Instead of my planned healthy dinner, we had

It was delicious but extremely unhealthy. I have really been struggling this past week with my nutrition. It makes me sad because I was doing so well! When I eat healthy I don't feel sluggish and I have so much more energy! I guess it hasn't helped that work has been so busy I haven't been able to take my normal lunch breaks to the gym. Last night I still wanted to do SOMETHING to get a little exercise so I jumped rope during the commercial breaks of TBL and The Voice.

Pesto Pizza

Ingredients:
Pesto
1 large thin whole wheat pizza shell
Slices of grilled free-range chicken
Onions, sliced (I omitted)
Tomatoes, sliced
Green bell peppers, chopped
Fresh mushrooms (I omitted)
Part-skim mozzarella cheese, shredded

Directions:
Spread a layer of pesto over the pizza crust. Top with slices of grilled chicken, onions, tomatoes, bell peppers, mushrooms, and mozzarella cheese. Bake at 350 degrees until crust is brown at edges and cheese is melted.

I sprinkled the mozzarella cheese on mine and didn't overload it. That plus omitting the few ingredients mentioned above, my pizza was about 268 calories per slice.

Blueberry Rosemary Chicken

Blueberry Rosemary Chicken

Ingredients:
2 cups frozen blueberries, divided
1/2 cup pomegranate or blueberry juice
1/4 cup prepared yellow mustard
2 tablespoons olive oil
1 tablespoon honey
1/4 cup dried rosemary
2 tablespoons dried basil
2 tablespoons ground black pepper
20oz chicken breasts, boneless and skinless

Directions:
1. In a blender combine 1 cup blueberries with the next 7 ingredients. Set mixture aside.
2. Pound chicken breasts to about 1/2 inch thickness. Marinate chicken in mixture and add water, if needed, to cover.
3. Heat a large skillet. Add marinated chicken breasts and brown on each side. Add marinade, bring everything to a boil then reduce to low heat. Simmer for 30 minutes or until the marinade starts to reduce and thicken. Add the remaining blueberries and heat through.

These turned out really good. I wish I had my camera when I made them. I put too much of the blueberries in the initial marinade and so my chickens came out this nice purplish-blue color. Still tasty none the less!

Protein Pancakes

I am not able to have many protein powders due to the ingredients. Some of the stuff they put in those things just does not agree with my stomach. When I found this recipe, I was really excited. Protein pancakes sans protein powder! Batch #1 was NO good, batch #2 was wonderful! I did not take pictures of this wonderful meal, because my camera was MIA during the production!

Protein Pancakes (recipe taken from Fitness magazine)
Ingredients:
1/2 cup rolled oats
1/2 cup fat free cottage cheese
1/2 cup egg whites
1 teaspoon vanilla extract
1 pinch of cinnamon

Directions:
Combine all ingredients in a bowl and mix/blend into a batter consistency. Heat cooking spray in a nonstick skillet and pour 1/4 cup of the batter in at a time to make 1 pancake. Cook 2 minutes per side or until lightly browned.

Recipe makes 6 pancakes.

Calories: 52
Carbs: 6
Fat: 1
Protein: 6

I top mine with spray butter and fresh blueberries (calories for these are not added in above). The magazine says to top with agave nectar and fresh berries. It also says the nutrition score per pancake is 260 calories and 25g of protein. Not sure where the discrepancy in the protein is coming from.

I try to make a new recipe at least once a week. I will try them out and then post them on here with my review of how they turned out! Today I will post three recipes. Tomorrow I'm trying out a new recipe 'protein packed cheese stuffed chicken'. Since it will be dinner, I may not post that recipe until Wednesday.

I am a total slacker!

It's been over two weeks since I've last posted. I am terrible and I'm sorry. I wonder if people who post frequently (6-7 times a week) have full time jobs... and if they do, where on earth they find time to blog so much? If you are a reader, have a full time job and still blog 6-7 times a week, will you pretty-please share your secrets with me? I REALLY want to blog more often. Although I don't share much 'personal' stuff, it still gives me a sense of release to be able to type on here! 

In fitness news, training for the half is going really well. I ran 12 miles this past Friday. I had a little trouble on miles 1 and 10-11. The longer my runs get the more I enjoy it though. Does that make any sense? During the run I might be hating myself for it (not literally) but when I'm finished I have the greatest sense of accomplishment and SO much energy! It's fabulous! I have already decided I am signing up for another half marathon in the fall. Originally I had someone sign up for this half with me but she is no longer doing it. My original goal was just to finish with her (she has a slightly slower pace than me) but now that she is not doing it, I can't decide if I should set a time goal. I've never run a half marathon before, so regardless, it will be a PR for me :)


On another fitness note, I got Turbo Fire for my birthday and CAN'T WAIT to start the whole program. Seriously, watch the video, it will get you PUMPED! After consideration, I decided it would be too much if I were training for the half and started the program at the same time. So once the half is over, I am going to start the Turbo Fire program. I told my husband this WILL be the year I get a 6-pack! Years prior I've had a goal to be 'more defined' but my nutrition habits would not allow for that. I'm on a much better track for that to be obtainable! I may or may not post before and after pictures. Haha, maybe I'll take the pictures then see if my progression is worth posting!

A while back I wrote how I was on the hunt for a new gym bag. I finally got one. It isn't exactly what I was looking for, but it's actually working out really well for me! The main thing I wanted was for it to be a 'backpack' style and that's the one thing it doesn't have. Oh well. I still love it a bunch! I know you're dying to see what it looks like, right?!? Well, here she is!

It's actually a Thirty-One bag, the Cindy Tote to be exact. It gets the job done though!

On to the question you've all been wondering: Where have I been? Well, I've been working, spending time with my husband and family, spending (not nearly enough) time with Jesus, preparing and helping with a 'health' class each Thursday, continuing to train for the half marathon coming up in two weeks (YAY), showers and birthday parties, looking for new (clean) recipes, sleeping and somewhere in there trying to find some 'me-time'. Oh yes, and not in that order. I think about blogging often, the time just hasn't been there. So for those of you who are reading this and have stuck around in my absence, I will return again soon, but for now I leave you with a HUGE
